Our Genetics

At the Sleep Ranch, we are thinking about our customers long before the calf is even born. We select breeding stock that excel in leanness, yet are well marbled and tender to provide an enjoyable eating experience. Through artificial insemination and natural service, we breed to some of the best bulls in the country. We recently started DNA testing our replacement heifers so we can more accurately select cattle that carry traits that meet our goals.

Our Care

Our family is committed to providing quality care, taking that job very seriously. Our ranch is located in the foothills of the Black Hills, and cattle are summered in the high valleys of the national forest. The fresh mountain water and abundant forage create the optimum conditions to raise cattle. After weaning, the cattle are grown on a combination of grass, hay, and grain until they reach market weight.

Our Beef

Customers have the option to buy either a whole beef or a half beef. We process our beef only a few times a year and require an advance order. Please refer to the information below to understand the ordering and payment process.

In the summer, we do market a limited amount of individually wrapped steaks, roasts, and ground beef through the store at Iron Creek Lake

We offer our beef as either a whole beef or a half beef. By selling this way customers enjoy the best value and greatest ability to customize their order.

  • Our beef is sold on the hanging weight basis (which is the carcass on the rail with the hide, and entrails removed) The hanging weight is roughly 60% of the live weight.

  • The cut weight, which is the pounds of meat to take home, is then about 65% of the hanging weight.

  • We will deliver the animal to the locker. A deposit will be required upon ordering. Payment to us will be based on the hanging weight

  • We will provide a cutting instructions form so you can customize your order. The customer is responsible for payment for processing paid directly to the locker. The customer is also responsible for picking up their beef from the locker in a timely manner.

WHOLE BEEF

The hanging weight will vary but will be around 900 lbs. which will yield about 575 lbs of retail cuts to take home. 20 cubic feet of freezer space should be plenty to store your beef.

 

HALF BEEF

A half beef is split right down the midline. The hanging weight will vary but will be around 450 lbs which will yield about 290 lbs of retail cuts to take home. 10 cubic feet of freezer space should be plenty to store your beef.
